What we're eating: Garlic parmesan chicken

Despite dramatics of reality TV, I'm a big fan of "Extreme Weight Loss" with Chris and Heidi Powell. They seem to spend a lot of time helping people with the emotional and mental side of weight loss, rather than just giving them a diet and exercise plan.

This is seriously soooo good, and it's easy to make. The meal is a big hit with Kyle and Kenlee, too! I serve ours with garlic noodles (add a little bit of light Country Crock and garlic salt to plain spaghetti noodles). Here's the breakdown:

Garlic Parmesan Chicken: 8 points for a whole breast (Heidi's recipe calls for a 4 oz serving, which is about half a breast)

Garlic noodles: 6 points for 1 cup

Broccoli: ZERO points!

TOTAL: 14 points

  1. After reading your blog I had to try this chicken too. It was FANTASTIC!!! I paired it with mushroom quinoa and broccoli and am looking forward to leftovers tonight for dinner!! I love your blog and check it regularly for updates. I was wondering what are your go to snacks?

Part 1: The hills are alive If you were looking at elevation maps (hills) for a marathon course, which of the two below would you rather run?



Yeah ... That's a trick question – they’re for the same race ... my race! They’re just scaled differently, which is REALLY hard to see unless you’re some sort of map guru (which I am not).
